Taco Soup

Ingredients

1 lb of ground beef 
1 large chopped onion
1 can of corn 15.25 oz
1 can of pinto beans 15.5 oz
1 can of kidney beans 15.5 oz
1 can of Rotel tomatoes 10 oz
1 can of green chilies 4 oz
1 can of diced tomatoes 14.5 oz
1 box of Beef broth 32 oz
1 pk of Taco Seasoning 
1 pk of Ranch seasoning (hidden valley)
Bag of Fritos Chips (Corn chips)

Toppings

Shredded cheese
Sour Cream
Chives

Directions

  1. Heat a large pot over medium-high heat cook ground beef.
  2. Cook until the beef is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease.
  3. Add chopped onion and cook until it’s transparent.
  4. Add the corn, pinto beans, kidney beans, Rotel, green chiles, diced tomatoes, broth, packet of taco seasoning and packet of Hidden Valley Ranch original seasoning. Mix well and bring to a boil, stirring occasionally.
  5. Reduce heat to low and simmer for about 30 minutes.
  6. Add Fritos chips into soup bowl, ladle soup over the chips.
  7. Garnish with shredded cheese, sour cream and chives, if desired.

Ingredients

  • Mild Italian Ground Sausage -16 oz or
    Mild Italian Sausage – 5 links
  • 2 cloves of garlic -minced
  • 1 large onion- chopped
  • 1 large green bell pepper- chopped
  • 3 stalks of celery- chopped
  • 1 lb of cut and peeled baby carrots- chopped in half
  • 1 32 oz of Swanson Beef Broth
  • 1 can of Rotel
  • 1 tsp. oregano
  • 1 tsp. basil
  • 1 bay leaf
  • 2 medium zucchini- chopped
  • 1 package of frozen cheese tortellini- 19 oz
  • Mozzarella cheese- shredded

Directions

Remove casing from sausage and crumble meat into heavy duty stock pot and brown meat on medium heat.

 Add your garlic, onions, bell pepper, celery and cook till veggies are tender and translucent.  Add carrots, beef, broth, Rotel tomatoes, oregano, basil, bay leaf, and zucchini.  Simmer for about 45 minutes on medium heat.

Add  4 cups of  water. Bring to a boil and removed bay leaf. Once your soup is boiling again add your frozen cheese tortellini and turn off heat.

Add the soup to a serving bowl and top it with mozzarella cheese (optional) and serve your soup with fresh french bread with butter.

MaMaw’s Chicken and Dumplings

One of my favorite memories of a child growing up is my grandmother chicken and dumplings.  I could eat these any season of the year and they truly are a favorite in my house now too.  I asked my mom if it would be okay if I shared this family recipe with the world and she said absolutely. So here is a 3 generation recipe.   I hope it brings you comfort and joy with each bite you take.  Love you!

 

 

Ingredients you will need:

Water

Whole Chicken

3 cups flour

3 tablespoons of Crisco shortening

1/2 gallon of whole milk

salt and pepper to taste

 

Directions:

Place chicken in large pot with about 8 cups of water.  Add salt and pepper (I use about 1 tablespoon each) . Bring chicken to a rolling boils and simmer for approximately 30 to 45 minutes or until chicken is tender.

Once chicken is fully cooked place it into a big bowl and put it in the refrigerator to cool. Set aside 1 cup of the chicken drippings.

 

To Prepare Dumplings:

In a large bowl add 3 cups of flour, 3 tablespoons of Crisco shortening and salt and pepper it really good.  With your hand mix the ingredients together until you get a texture between cornbread and cake feel. 

Pour your WARM not hot or cold chicken drippings into your flour mixture and mix until you get a sticky dough and set aside.

Now take your chicken from the refrigerator and debone it. Place the chicken pieces into the chicken drippings and bring to a boil.

Once you have debone your chicken, pour about a half of gallon of whole milk into your pot.  Bring to a boil.

On a floured surface, roll out dough very thin with a rolling pin. Cut into 1 inch wide strips (I use a pizza cutter, but a sharp knife works also).  Cut 1 inch long pieces of dough from these strips and drop dumplings mixture onto the top of the simmering chicken. 

NEVER STIR YOUR DUMPLINGS. Instead push them down with a spoon.  Once you have completed and placed the dumplings in, continue to cook for about 10 minutes and turn off.
